Daddy Shout Out!-4/5/10

We miss you, Daddy! Richard is on a business trip in Louisville, Kentucky and we miss him. My parents are still here and the time is going pretty quickly but it's always a bit weird when Daddy is not at home. I almost feel guilty about making tonight's dinner while he is gone. It was really good and I wish he could have enjoyed it with us.
Bon Appetit added a new column this month called "Sunday Suppers". I actually think this is just the "Family Style" column renamed but the concept is the same. A meal should bring family together and be a time of conversation and togetherness. That's what we did tonight. Eyrleigh and I enjoyed a wonderful meal outside on the deck with Grammy and Dada. The Chipotle Roast Chicken Tacos began with the real deal, a wonderfully moist roast chicken. I forget how easy it is to roast a chicken and how wonderful they taste. This chicken was rubbed with chipotle butter and roasted with onions and garlic. This chicken was easy to shred and simply was put on tacos with avocado and a bit of sauce. The tacos were wonderful and other than taking some time, this was easy to do.
The side dish of Poblano, Potato, and Corn Gratin was good but need a bit of tweaking. The recipe called for a quick saute of the poblano peppers. They needed much longer to soften and should
not have been left in long strips. The peppers were still too chewy and the pieces too big to be easily eaten in the dish. The rest of the dish was very good but was a bit unnecessary with the one dish tacos. This dish would have been a great match for a Mexican spiced chicken or steak
dish. We can try that when Richard gets home!

I Don't Boil Lobsters...July in Review-7/31/09

Gourmet's July recipes are in the bag and aside from the two recipes I refused to do, I made every recipe for the month. I suppose I should explain... I eat meat but I cannot actually kill the animal before I eat it. I suppose I should amend this statement. The mussels I brought home from the store said "Live mussels" but they sure didn't move or give any other indication that they were alive. Lobsters do, they move, they squirm, and whether you believe it's simply air escaping from their shells or not, they make a high pitched screaming sound when first put into boiling water. I just can't do that. The very thought of it turns my stomach and makes something I find fun, cooking, fill me with dread. So I didn't make the Boiled Lobster Dinner with Sesame Mayonnaise on page 54 or the Lobster Rolls with Lemon Vinaigrette and Garlic Butter on page 28.      It wasn't as if I'd fallen to the depths of Hungry Man dinners for the last few years but life happened and the priorities fell in a different place.  One child had turned, not without significant drama, into two and naptimes fell from two down to rare and cherished.  Five years on a single income did not engender in me the thrifty spirit of many a mommy blogger.  I didn't want to blog about the meal I made with only $3.75 worth of ingredients, not because I couldn't but because being thrifty isn't something I find particularly exciting, unless it is airfare.      In August of this last year, I went back to work teaching full-time, after subbing for two years at the school I used to teach at.  I had always hoped to go back when Rylynn, my youngest was in kindergarten but made the plunge a year early when a job opened and the cards fell into place.  This year was incredibly busy.  I very cockily assumed I could get my ESOL certification while getting used
