Home Again, Home Again, Jiggity Jig!-6/3/09

Today we arrived home from our 3 1/2 week trip out west today at about 1:30 p.m. I had no plans to begin the June Gourmet project tonight. Heck, I had barely dug the June issue out of the mail, never mind actually look at it. But I picked up chicken breast at the store and on a lark, checked out this month's issue of Gourmet to see if there was anything to jazz up chicken breasts with salad. I was in luck. This month's The Last Touch section was all about rubs for different meats, chicken included. I had all the spices needed so I quickly ground up this flavorful chicken rub.
The addition of toasted fennel was interesting and the most standout flavor. I may have cut out a tablespoon and I wish I had cut the salt in half, too. The level of salt was a little overpowering and I felt the fennel masked the other spices. The picture at right is a little dark but the rub coated nicely and gave nice color to the chicken.
I still have a small jar of rub remaining and look forward to trying it again, perhaps combining it with a sauce to cut the salt and give the sauce a spicy zip. Not bad for my first day back!
